Upon meeting Julien and Sarah Launois and learning about their innovative Single Barrel project, a meaningful collaboration was born.
The 00 Wines Champagne project is a creative partnership with Champagne Paul Launois, rooted in the Grand Cru village of Le Mesnil-sur-Oger in the Côte des Blancs, where some of the world’s finest Chardonnay is grown.
Since 2016, 00 Wines has collaborated with Julien and Sarah Launois, the husband-and-wife team who lead the family’s grower-champagne estate, to craft small-lot, barrel-aged Blanc de Blancs Champagnes that reflect both terroir and texture with nuance and precision.
Julien, who returned from years abroad to establish the Paul Launois label, brings his deep viticultural experience and dedication to quality, while Sarah contributes her creativity as an artist and designer to the identity and presentation of the wines. Together, they shepherd fruit from their Grand Cru Chardonnay vineyards and work with 00 Wines to produce sparkling wines that marry traditional Champagne artistry with a shared commitment to expressive, terroir-driven winemaking.
