Our Blanc de Blancs work with Champagne Paul Launois extends the Chardonnay pursuit into Le Mesnil-sur-Oger.

Champagne is the third pearl in the 00 Wines strand: a place where Chardonnay is shaped by chalk, northern light, lees aging, and patience. Since 2016, 00 Wines has collaborated with Champagne Paul Launois in Le Mesnil-sur-Oger to produce barrel-aged Blanc de Blancs vintage and non-vintage Champagnes.

A collaboration rooted in Chardonnay.

The Champagne chapter of 00 Wines began through collaboration, not acquisition. In 2016, the house began working with Champagne Paul Launois, a grower-producer based in Le Mesnil-sur-Oger, one of the great Grand Cru villages of the Cote des Blancs.

Julien and Sarah Launois bring a deeply personal energy to their house, stewarding family Chardonnay vines and building a Champagne project that is both precise and intimate. Their work with the Single Barrel Project reflects the same spirit that draws 00 Wines to the region: specificity, patience, and a direct relationship between site and bottle.

For 00 Wines, Champagne is not separate from the Oregon and Burgundy work. It is another way to ask what Chardonnay can become when place, craft, and time are allowed to speak clearly.

Why We Work Here

Chardonnay through chalk and time.

The Cote des Blancs gives Chardonnay a vertical kind of beauty. Chalk stores water, preserves tension, and creates a mineral frame that can carry freshness through years of aging.

In Le Mesnil-sur-Oger, Chardonnay often speaks with citrus, white flowers, chalk dust, salt, fine texture, and a long, crystalline line. It is not the same language as still Chardonnay from Oregon or Burgundy, but it belongs to the same 00 Wines pursuit: clarity, purity, and depth without excess.

The Champagne work asks for patience. The wine is shaped not only by vineyard and harvest, but by tirage, lees, barrel, dosage, and the slow architecture of time.

The 00 Wines Champagne work focuses on Blanc de Blancs: Chardonnay shaped by chalk, barrel, and time into wines of mineral tension, fine mousse, and luminous length.

Single Barrel

The single-barrel work reflects a more intimate lens on Le Mesnil-sur-Oger, giving individual lots and decisions a chance to reveal nuance within the broader language of the Cote des Blancs.

Our Work in the Cellar

Barrel, lees, and the patience of Champagne.

The Champagne cellar work is built around precision rather than ornament. Barrel can add architecture, but the line of the wine must remain chalk-driven and bright.

Lees aging adds dimension, texture, and quiet complexity. The goal is not to mute Chardonnay’s clarity, but to let time give it resonance.
