Burgundy is where 00 Wines tests its ideas against one of the world’s most exacting wine cultures. The work began as an extension of the Oregon project: a way to place Chardonnay and Pinot Noir in direct dialogue with the climats that first inspired the house. In 2022, 00 Wines launched the Burgundy Idea Lab, a small project based at Chateau de Bligny-les-Beaune, built for experimentation with some of the most expressive terroir on earth.
Our Story Here
From the beginning, 00 Wines looked toward Burgundy not as imitation, but as a discipline. Chris and Kathryn Hermann founded the house with a belief that the textural precision and mineral clarity of great Burgundian wine could open a new conversation with Oregon’s Willamette Valley.
As the project evolved, Burgundy became more than a reference point. It became a place of direct work. The Burgundy Idea Lab allows the 00 Wines team to engage with limestone, marl, clay, old cellars, and historic climats from inside the region rather than from afar.
Chris Hermann and Maxence Lecat now work across Oregon and Europe with a single question: how can each site be given enough attention to reveal itself without being forced into a house style? In Burgundy, that question becomes especially exacting. Every slope, stone, and decision matters.
Why We Work Here
Burgundy remains the world’s most precise model for reading vineyard difference. Its climats are not broad gestures. They are small, named, observed places where slope, exposure, limestone, marl, clay, drainage, and history converge.
For 00 Wines, working in Burgundy is a way to deepen the house’s own vocabulary. It sharpens the understanding of Chardonnay and Pinot Noir, but it also demands humility. These vineyards do not reward excess. They reward attention, restraint, and time.
The goal is not to make Burgundy more like Oregon or Oregon more like Burgundy. The goal is to let each place clarify the other.
Chardonnay
In Burgundy, Chardonnay carries texture, salt, density, and light through limestone and marl. The 00 Wines white Burgundy work follows tension rather than excess, seeking wines with mineral force and long, lucid persistence.
Pinot Noir
Burgundy Pinot Noir asks for balance between aromatic lift and architecture. The work is focused on preserving the internal shape of each climat: fruit, tannin, earth, spice, and the quiet authority of place.

Grand Cru Chardonnay shaped by the Hill of Corton, pale limestone, marl, power, and longevity.
Meursault Charmes
Premier Cru Chardonnay with breadth, chalky marl, orchard fruit, and mineral persistence.
Beaune Les Cent Vignes
Premier Cru Pinot Noir with red fruit, silk, clay-limestone finesse, and graceful structure.
Pommard Clos des Epenots

Our Work in the Cellar
The cellar work in Burgundy is intentionally restrained. The point is not to impose polish or power, but to protect what the climat gives: energy, texture, aromatic detail, and line.
Working in Burgundy also lets 00 Wines test ideas across continents. Choices made in Oregon can be questioned in France; lessons from Burgundy can return to the Willamette Valley with new clarity.
