A Grand Cru Collaboration
00 Wines Grand Cru Blanc de Blancs Champagne is a collaboration between 00 Wines founders Chris Hermann and Kathryn Hermann, and Champagne Paul Launois founders Julien Launois and Sarah Launois.
Born into a family with vinegrowing heritage and hailing from the renowned Champagne region of France, Julien’s journey in winemaking began amidst the picturesque vineyards that define the landscape. Julien belongs to the exclusive group, the Grands Crus d’Exception de Champagne, made up of 15 men and women, who have learned their trade from their elders and keep a rich and complex legacy of Grand Cru Champagne alive.
Organic Winegrowing
The family at Champagne Paul Launois works with respect for the environment. No chemical inputs have been applied to the vines for many years. The vines are naturally grassed in winter, and in summer the soil is plowed.
The vintages are also worked with the same intention: to limit inputs, handling and energy consumption.
Single Barrel Grand Cru Champagne
The Single Barrel concept is an innovation in the world of Champagne by Julien Launois and Sarah Launois.
Julien Launois had the idea in 2016 to have his oak barrels manufactured by the “Artisanal Cooperage of Champagne” with 4-year drying staves and different toasts from light to strong toasting. He selects his best plot of land from Le Mesnil-sur-Oger to fill his barrels. The use of new barrels for the production of Champagne is a first, and it is within Champagne Paul Launois that this experience comes to life.
Only 216 bottles of the 00 Wines Single Barrel Grand Cru Champagne are produced each year, with only 192 x 750mL and 10 x 1.5L released to the 00 Wines private client list.
Non-Vintage Grand Cru Champagne
00 Wines is renowned for its exceptional quality and innovation in winemaking, and their venture into non-vintage champagne is no exception.
00 Wines founder Chris Hermann blends Chardonnay from the Launois family’s organically farmed Grand Cru in Le Mesnil-sur-Oger to craft these special bottlings. He blends and selects low dosage to create a harmonious symphony of flavors and aromas in their non-vintage Grand Cru Blanc de Blancs champagnes.
