At 00 Wines, terroir is not a concept; it is a gesture. It is the quiet hand that guides every decision we make, the conversation between vineyard and vintner rendered in nuanced, crystalline detail. Our work begins with profound respect for place and culminates in wines that translate site into sensation: energy, texture, tension, and astonishing length.

Our Philosophy:

  • Precision with Purpose: The most expressive wines are crafted with intent. Each parcel is tended with serious focus to capture native character without compromise.
  • Transparency over Ornament: Technique serves terroir. We choose methods that reveal illuminating minerality, purity of fruit, and the architectural lines of each site.

How We Work with Farmers:

  • Partnership at the Vine Level: We collaborate with a select circle of growers who share a belief in exacting, site-led viticulture. Our relationships are multi‑year and purpose‑built; rooted in trust, shared standards, and a mutual obsession with detail.
  • Shared Standards, Zero Shortcuts: Together we set clear targets for canopy balance, crop load, and vine health. We align on water use, weed control, and soil vitality to preserve natural acidity and aromatic precision while protecting the long‑term resilience of each block.
  • Farming that Listens to Place: We champion practices that let the site speak—thoughtful leafing for shade and airflow, careful fruit thinning to maintain concentration, and soil programs tailored to geology, from marine sedimentary to volcanic and fractured rock. Every choice is calibrated to keep the vineyard’s signature intact.
  • Stewardship and Accountability: We invest in the land alongside our growers by funding trials, soil mapping, and monitoring programs that inform smarter decisions year over year. Transparent data sharing and regular vineyard walks keep everyone aligned on quality and timing benchmarks.
  • Micro‑Parcel Focus: Within each vineyard, we identify rows and micro‑parcels with distinct character. Those blocks are farmed to their own cadence, ensuring clarity of voice whether bottled as single‑vineyard expressions or blended for balance and dimension.
  • People First: Great farming is human work. We support training, safety, and fair compensation for vineyard crews because craftsmanship in the vines is the first luxury our wines embody.

The Gesture of Terroir:

  • Site Selection: We work with blue‑chip vineyards and singular parcels whose histories are written in their soils, each contributing a distinct cadence of salinity, spice, lift, or florals.
  • Viticulture in Dialogue: Decisions are made in conversation between us, our growers, and the vines themselves. The goal is constant: protect freshness, precision, and texture so the wine can carry the fingerprint of its origin.

 

 

The Gesture of Harvest

Harvest at 00 Wines is a ritual of devotion. It is the moment when a year of listening becomes a series of deliberate gestures: quiet, precise, and uncompromising. Every cluster, every berry, is handled with the care of a craftsperson shaping a rare object. The result is clarity in the glass: purity, tension, and a living expression of place.

Black Chardonnay: Black Chardonnay is our signature act of audacity and control. We press whole clusters firmly and intentionally, embracing phenolic depth to draw out color, texture, and a saline-mineral frame that shimmers with energy. This is Chardonnay reimagined: sculpted, architectural, and luminously savory, with citrus oils, stone fruit, and crushed rock carried on a sleek, tensile line. Black Chardonnay is not an effect; it is a philosophy. By leaning into the full character of the grape, we achieve a wine of striking precision and longevity.

Pinot Noir, Cut Like a Jewel: Our Pinot Noir is treated with the delicacy reserved for heirlooms. Each cluster is hand-sorted; then, berry by berry, we snip fruit from the stems using tiny scissors. This is aan approach more akin to fine jewelry than winery work. This jeweler’s cut preserves pristine berries, protects aromatics, and keeps tannins filigreed and pure. The result is a Pinot Noir that is perfumed and precise with red and black fruits threaded with spice and crushed rock, finishing long, lifted, and impeccably detailed.

  • Timing by Feel: We pick for brightness and definition, guided by flavor and texture as much as numbers. The goal is clarity: fruit that arrives with electricity and balance.
  • Selection Without Compromise: Multiple passes in the vineyard ensure only perfectly ripened clusters make the cut. In the winery, hand-sorting removes distraction so the wine can speak with a singular voice.
  • Micro-Parcels, Singular Identities: We keep rows and blocks separate to honor nuance. Distinct lots retain their cadence from the first snip to the final blend.
The Gesture of Élevage

Élevage at 00 Wines is the art of shaping potential into precision. It is a patient choreography; measured, attentive, and exacting, where every decision clarifies the voice of terroir. From the quiet hum of the cellar to the final moment of release, we guide each wine with restraint so that energy, texture, and site emerge in high relief.

Our Philosophy of Élevage:

  • Reveal, Don’t Impose: Technique exists to illuminate terroir. We seek clarity of line: minerality, tension, and aromatic purity, over heaviness or ornament.
  • Texture as Architecture: The feel of a wine on the palate is its structure made tangible. Our élevage builds seamless, tensile textures that carry flavor with poise and length.
  • Patience with Purpose: Time in barrel and on lees is earned, not assumed. We move when balance is undeniable.

Our Partnership with DAMY in Meursault:

  • Barrels by Design: We work primarily with DAMY, collaborating directly with the French artisans in Meursault who craft our barrels. Together, we select grain, stave seasoning, and toast profiles to frame the wine without overshadowing it.
  • Grain Matters: Fine and extra‑fine grain oak provides a slow, elegant exchange, polishing texture and amplifying detail while preserving luminosity and freshness.
  • Toasts for Transparency: We favor light to moderate, nuance‑driven toasts calibrated lot by lot. The goal is lift and line, not obvious oa but rather a whisper of structure, and clarity from first aroma to final echo.
  • Consistency Through Craft: Multi‑year relationships and on‑site selection ensure continuity of tone across vintages. Each barrel is a bespoke instrument; together they compose a cellar voice that is unmistakably 00.

The Gesture of Élevage:

  • Micro‑Lot Integrity: Parcels remain separate through élevage to preserve identity. Only when the wine’s character is fully articulated do we consider a blend.
  • Vigilant Quiet: Oxygen, temperature, and topping schedules are managed with exacting consistency. Small decisions, repeated flawlessly, become the house signature.
  • Bottling on the Beat: We bottle to the wine’s rhythm, when structure, texture, and aroma align. Nothing is rushed; nothing is delayed beyond the point of vitality.
